End grain, not edge grain

The blocks are set with the grain running upright, so a blade passes between the fibres instead of across them. The surface closes back up behind the cut, which is why it keeps its face for years.

A groove that holds it

The channel is cut deep and runs the full way round, so the juices from a roast or a ripe melon stay on the board and off the counter.

Butcher block weight

Thick enough to sit still while you work and heavy enough that it does not slide when you lean into it. Turn it over for a clean serving face.

Every block is cut from solid teak, so the checkerboard falls differently on each board. The one that arrives is its own.
